Therefore, it is recommended that if you want to incorporate legumes in your diet, the process should be slow. You can eventually keep increasing the amount of legumes you want in your diet.
If you are cooking legumes, always check them carefully. Legumes will get spoilt if they are cracked. Look out for legumes that are moldy.
If you find any such legumes, separate them from the rest and discard them. When you are buying legumes, always go for the ones that have a deeper color. They should not be stored for long because they tend to lose their flavor. However, if you do have to store them, use an airtight container and store them in a cool place, away from moisture and light.
Soaking legumes overnight and then storing them helps them to germinate. This improves the taste and the nutritional value of the seeds.
